What is saison? Dry farmhouse ale built for refreshment

Saison is a highly attenuated Belgian farmhouse ale with dry fermentation, lively carbonation, fruity or peppery yeast, and flexible strength.

By Craft Beer Critics

Saison is a Belgian farmhouse ale known for a dry finish, lively carbonation, and expressive fermentation. It may show pepper, citrus, orchard fruit, herbs, grain, earth, or gentle hops. Strength and color vary, but refreshment and a complete dry finish are central.

What does saison taste like?

Yeast often creates peppery spice and fruity notes. Malt can feel grainy or bready. Hops may add flowers, herbs, spice, or bitterness. The beer should finish very dry rather than sweet or heavy.

The BJCP Saison guide describes a family that ranges from low-alcohol table beer to stronger versions, most often pale and highly carbonated.

Why is it called farmhouse ale?

The style is connected to farmhouse brewing traditions in Wallonia, the French-speaking part of Belgium. Modern versions interpret that history in many ways. Farmhouse does not mean the beer should taste dirty or uncontrolled.

Is saison sour?

Usually not. It can have a tart edge or high dryness that feels sharp, but pronounced sourness belongs to other traditions or specialty interpretations.

Saison vs witbier

Saison is generally drier, more peppery, and more bitter. Witbier is usually softer, wheat-based, and commonly flavored with coriander and orange peel.

Saison vs IPA

IPA puts hops in front. Saison uses fermentation as a major flavor source, even when it is well hopped. A hoppy saison can overlap, but the dry yeast character should remain part of the identity.

What food works with saison?

Dryness, carbonation, and peppery character make saison flexible with roast chicken, grilled vegetables, washed-rind cheese, seafood, and herbal dishes. Match intensity if the beer is especially strong.

Is saison sweet?

No. A defining feature is a highly attenuated, dry finish.

Is saison a wheat beer?

It may include wheat, but wheat is not required.

Is saison strong?

It can be low, moderate, or strong in alcohol. Check the ABV.

Does saison contain spice?

Sometimes, but the peppery impression often comes from yeast. Added herbs and spices should be declared and should not erase fermentation. This distinction matters because a well-made unspiced saison can smell more peppery than a beer built with a long ingredient list.
